One Pan Chicken Dinner
There is a misconception that healthy meals are time consuming to prepare, expensive and tasteless. Well actually the expensive part is in fact true, but two out of three ain't bad 😉.
The key is in prepping prior to the actual cooking time, you can also try to make 'one pots' so that cooking time is reduced. Because you're trying to eat healthier, it doesn't mean that the only seasoning that can be utilized is salt and black pepper or none at all. You can add any seasoning you desire based on your palette. I add grated ginger to almost everything I prepare but there are many other options.
I recently tried a one pan chicken dinner and it was quick and easy and tasty (if I do say so myself), see recipe below. Note that I prepared for one so you can increase portions based on the number of persons you're preparing for.
You'll need;
2 chicken breasts
Green beans (your preference of beans)
6 potatoes - halved
olive oil, salt, pepper and paprika
fresh seasonings/herbs - chadon benny, pimento peppers,
onion, garlic, chives
Method
Season chicken and place in the center of a baking pan and place the green beans and potatoes on either side.
Drizzle beans and potatoes with olive oil, salt, pepper, paprika and toss.
Cover baking pan with foil, place in a preheated oven at 350° and bake for 1 hour. Sprinkle with chopped parsley when done.
And....walla !!! A Healthy feel good dinner.
